Lemon Capers Sauce by Cindy Pascale

This is an easy and elegant sauce for seafood such as salmon, tilapia or shrimp. In a few minutes, it elevates your fish or shrimp from a basic meal to an extraordinary meal! I especially like this sauce with salmon. When I cook the salmon in a skillet, I like to scrape the small bits off the bottom of the skillet while the butter is melting.

Ingredients
  

  • 4 tbsp butter, salted
  • 2 tbsp jarred capers, drained
  • 1 whole garlic clove, peeled
  • 1 tbsp lemon juice, plus zest of 1/2 lemon
  • 1 dash salt

Instructions
 

  • Melt the butter in a saucepan or skillet over low heat.
    Once melted, add the capers and garlic. Cook until fragrant, about 3 minutes.
    Remove from heat and remove garlic clove. Stir in the lemon juice, zest and salt.
    Serve immediately over fish or shrimp. Makes about 4 servings.
