Salami Surprise Cups (otherwise known as Salami Cups)

These delicious appetizers were first presented to me at a Happy Hour years ago and I fell in love with them.
Bite size baked salami with mozzarella cheese, basil, artichokes and tomatoes in the middle of every cup. The salami is crispy and the filing isn't melted but soft. Not to mention this recipe is extremely easy to make, I mean easy as easy can be.

Ingredients
  

  • 24 slices Genoa (or any salami you like) 4 inch circles (I used large and small size salami slices)
  • 1 cup marinated artichoke hearts, drained and finely chopped
  • 1/3 cup roasted tomatoes or jarred roasted red peppers diced
  • 1/4 cup fresh chopped basil (plus more for garnish)
  • 4 oz mini mozzarella balls

Instructions
 

  • Preheat oven to 400°
    Position a rack in the middle of the oven
  • In a muffin tin place one salami slice into each cup.
  • Bake for 7-10 minutes or until salami is crisp
  • Next, in a large bowl, mix together artichoke hearts, tomatoes, basil, and mozzarella balls, I added salt and pepper. Then fill each salami cup with a spoonful of the mozzarella mixture and place on a platter. You can top each cup with a little sprinkle of chopped basil as well.
  • NOTE: You can make the mozzarella mixture ahead of time and place it in the refrigerator. You can also use the mixture with toasted bread to make an entire new appetizer.
