A Kendall Oberto Recipe
Spicy Peanut Dipping Sauce
3/4 cup peanut butter (smooth or crunchy will do)
3 tablespoons fresh lime juice
2 tablespoons ketchup
2 tablespoon soy sauce
1 tablespoon dark brown sugar
1 tablespoon cilantro minced
2 scallions sliced thin
1/2 teaspoons tabasco
1/2 – 2 teaspoons chili garlic sauce (to taste)
1 clove garlic minced
1-3 tablespoons hot water (add last to adjust thickness)
This sauce is adapted from one in The America’s Test Kitchen Family Cookbook and is my preferred accompaniment to Chicken Satay (recipe coming soon). I also loved it with the Thai Chicken Meatballs or would work anywhere peanut sauce is called for.
Combine all ingredients except water and whisk together. Add hot water to adjust thickness to preferred consistency.
