Texas Caviar Cabin Recipe #3

Cabin recipes have to be foolproof and hearty yet incredibly delicious all at the same time.
Years ago one of my besties, Kristin Veker made this appetizer and brought it to a boat party. It was large boat with a lot of people, this appetizer not only feed everyone it was the hit of the night!!
I make this ahead of time and keep it stored in the refrigerator.
Back in the day I would make most of my meals and dishes, for a weekend at the cabin on Thursday nights, this appetizer was one of those dishes. So good and so EASY to make.
Serve with Fritos!!

Ingredients
  

  • 1 can pinto beans
  • 1 can black eyed peas
  • 1 can corn
  • 1 large jar pimentos
  • 2 tbsp chopped fine jalapenô
  • 1 cup chopped pepper (red, yellow, orange or green)
  • 1 cup chopped celery
  • 1/2 cup finely chopped onion

Dressing:

  • 1/2 cup canola oil
  • 1/2 cup apple cider vinegar
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 tsp pepper

Instructions
 

Caviar

  • In a large bowl combine all ingredients and stir.

Dressing:

  • In a separate bowl combine all the ingredients and shake or whisk together.
  • Dump and Wamp (a Liz & Kendall term that speaks for its self) all the ingredients together and store over night covered in the refrigerator. Serve cold or room temperature with Fritos.
