The Best Lemon Bars

Recipe of the Day (#ROTD)

If you are needing a quick summer dessert to bring to a party or out boating on the lake these are for you. All the ingredients can be found in your pantry, except the lemons and they don’t take long to bake at all. These are my sons favorites and I hope they will be a favorite of yours too.

  • The Crust:
  • 2 cups of flour
  • 1/2 cup powdered sugar
  • 1/8 t salt
  • 1 cup of butter (room temperature)
  • The Filling:
  • 4 eggs
  • 2 cups of sugar
  • 6 T flour
  • 6 T of real lemon juice

Pre heat the oven to 350°

In large bowl mix all 4 ingredients together using a pastry cutter. Mix until all ingredients are combined al well and transfer to a 9×13 glass pan and press the dough down so it is even all the way through the pan. Bake for 20 minutes.

In another large bowl mix all 4 of the filling ingredients until well combined. Once the crust is done pour the filling mixture over the crust and bake for another 25 minutes. Once done let cool slightly and then sift powdered sugar over the top. Once cooled completely cut into squares.
