The Spinach/Cottage Cheese/Bacon Salad

This is a recipe from a very good friend of mine who had this salad at a sleepover in 7th grade. The parents were having a dinner party during the sleepover and the girls asked if they could eat the same dinner, this salad was on the menu and with one bite history was made.
That was 50 years ago and it is still a favorite of my friend Lauri Garvey's today. I will admit it is now a favorite in my household as well. Thank you Lauri.

Ingredients
  

Salad

  • 1 bag spinach
  • 1/4 sliced thin red onion
  • 1 cup cottage cheese (drained and rinsed in strainer until the water runs clear)
  • 4 slices bacon

Dressing

  • 1/4 cup sugar
  • 1/3 cup vinegar
  • 1 tsp salt
  • 2 tsp dry mustard
  • 1 tbsp poppy seed
  • 3/4 cup oil

Options

  • chicken or any protein

Instructions
 

  • I mix up the dressing first and let the flavors marry.
    Fry the bacon to a crispy consistency, drain the grease off and then crumble.
    Drain the cottage cheese in a strainer over the sink and rinse until the water is clear.
    Slice the onion very thin.
    In a large bowl put all the spinach in, then add the onion, cottage cheese and finely the bacon.
    Put some dressing in and toss and add more dressing if needed. You can always add more dressing but you can't take any out so add the dressing in increments.
