- 1 1/4 cup all-purpose flour, plus more for rolling out
- 1 tsp kosher salt
- 8 tbsp unsalted butter, very cold from the refrigerator, cut into 1/2-inch cubes
- 1/4 cup ice-cold water
To make the pie crust: In a large bowl, whisk together flour and salt. Cut the butter first then scatter into the flour and use either a pastry cutter or your hands to blend the butter into the flour. I think the term is called "smudge" the butter into the flour until the biggest pieces are the size of small peas. Gradually drizzle the water on top, using a spatula or your hands mix the dough until it comes together. If using the cuisinart: put flour, salt, and cut cold unsalted butter in the machine and turn it on let it run 1 1/2 minutes and then drizzle in the ice cold water. Run until the dough comes together. In either case when the dough comes together shape into a disc and flattened. Wrap tightly in plastic wrap and refrigerate for a hour and then roll out or you can keep in the refrigerator for a week.HAPPY EATING!!
