Monster Cookies
These have been a family favorite in my house for years. The recipe makes a lot of cookies so cutting this half is OK. I like cookies crispy on the edges and soft and chewy on the inside and to ensure that result I place the cookies on the cookie sheet and put them in the refrigerator for about 30 minutes (thank you Zoë François for that baking tip).
Ingredients
- 6 eggs
- 2 1/2 cups brown sugar
- 2 cups sugar
- 1 cup butter, softened
- 2 1/4 cups peanut butter
- 9 cups rolled oats
- 4 tsp baking soda
- 1 tbsp corn syrup
- 1 tbsp vanilla
- 12 ounces milk chocolate
- 16 ounces mini M&M's
- 1 small bag of chopped pecans
- 1 cup raisins
Instructions
- Preheat the oven to 350°
- In stand mixer using a paddle attachment, cream together the butter and sugars, add the peanut butter, rolled oats, baking soda, corn syrup, and vanilla.
- With a spoon fold in your chocolate chips, M&M's, pecans & raisins. Using a spoon keeps the integrety of the chocolate, nuts and raisins.
- Bake for 8 minutes, or slightly brownDO NOT OVER BAKE!!HAPPY EATING!!
