Monster Cookies

These have been a family favorite in my house for years. The recipe makes a lot of cookies so cutting this half is OK. I like cookies crispy on the edges and soft and chewy on the inside and to ensure that result I place the cookies on the cookie sheet and put them in the refrigerator for about 30 minutes (thank you Zoë François for that baking tip).

Ingredients
  

  • 6 eggs
  • 2 1/2 cups brown sugar
  • 2 cups sugar
  • 1 cup butter, softened
  • 2 1/4 cups peanut butter
  • 9 cups rolled oats
  • 4 tsp baking soda
  • 1 tbsp corn syrup
  • 1 tbsp vanilla
  • 12 ounces milk chocolate
  • 16 ounces mini M&M's
  • 1 small bag of chopped pecans
  • 1 cup raisins

Instructions
 

  • Preheat the oven to 350°
  • In stand mixer using a paddle attachment, cream together the butter and sugars, add the peanut butter, rolled oats, baking soda, corn syrup, and vanilla.
  • With a spoon fold in your chocolate chips, M&M's, pecans & raisins. Using a spoon keeps the integrety of the chocolate, nuts and raisins.
  • Bake for 8 minutes, or slightly brown
    DO NOT OVER BAKE!!
