
This is one of my favorite make-ahead recipes for cabin weekends because it packs a serious fiber and protein punch while still feeling fresh and summery. Serve it with tortilla chips, scoop it over grilled chicken, or toss in some shredded chicken to turn it into a meal.
Ingredients
- 1 can black-eyed peas, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can corn, drained (or about 1 1/2 cups fresh or frozen corn)
- 3 stalks celery finely diced
- 1 cup cherry tomatoes, halved (or 2 Roma tomatoes, diced)
- 1/2 cup fresh cilantro, chopped
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- juice of 2 limes
- salt
- pepper
Instructions
- In a large bowl, combine the black-eyed peas, black beans, corn, celery, tomatoes, and cilantro.
