Gluten Free Lemon Bars

Lemon Bars are a summer dessert staple. These bars are perfect for your gluten free friends and family members. If you are going to use powdered sugar as a garnish, check the ingredient list to make sure it uses cornstarch or tapioca starch as the base to keep the dessert gluten free. If you choose not to make these bars gluten free, simply swap the gluten free flour for all-purpose flour.

Ingredients
  

Crust

  • 1 1/2 cups gluten free flour
  • 1/2 cup granulated sugar
  • 1/2 cup salted butter-softened
  • 2 tbsp water

Filling

  • 1 1/2 cup granulated sugar
  • 1/2 cup lemon juice (about 4 lemons)-fresh squeezed with any pulp strained out
  • 2 tbsp grated lemon zest
  • 4 large eggs
  • 1/4 cup gluten free flour

Garnish

Powdered sugar (see note), whipped cream, or raspberries

Instructions
 

  • Preheat oven to 350° degrees. Spray 9 x 9” baking pan with nonstick spray and set aside.
    In medium bowl, combine the flour and sugar. Use a fork or knive to stir in the butter until a crumbly mixture results. Add the water a bit at a time. Press mixture evenly into the bottom of the pan.
    Bake for approximately 25 minutes until slightly golden and set.
    While the crust is baking, beat eggs in large mixing bowl. Add the lemon juice, zest, sugar and flour and mix until all ingredients are combined and smooth.
    Pour mixture into still hot crust.
    Bake 22 – 26 minutes or until the middle is set. Let cool on wire rack for a minimum of 2 hours or chill in the refrigerator.
    To serve, cut into squares and add optional garnishes.
