
This salad feeds 4-6 people
Ingredients
Salad
- 3 cups kale, chopped
- 1/2 cup carrots, grated
- 1/2 cup red onion, chopped
- 1/2 cup dried blueberries
- 1/4 cup raw sunflower seeds
- 1 yellow pepper, chopped
- 1/2 cup edamame soybeans, shelled
- 1/4 cup cashew nuts
Berry Vinaigrette
- 2 cups fresh or frozen berries, any variety of berries. if using frozen berries allow time to thaw before blending
- 1/2 cup pomegranate or blueberry juice
- 1/4 cup cashew butter
- 3 tbsp balsamic vinegar
- 1 tbsp apple cider vinegar
- 1/8-1/4 tsp cayenne pepper
Instructions
- Combine all the salad ingredients together into a large bowl.Make the dressing: blend all ingredients in a food processor or blender until smooth and creamy. Pour dressing over salad and enjoy.HAPPY EATING!!
