Maria’s Kale Power House Salad

This salad feeds 4-6 people

Ingredients
  

Salad

  • 3 cups kale, chopped
  • 1/2 cup carrots, grated
  • 1/2 cup red onion, chopped
  • 1/2 cup dried blueberries
  • 1/4 cup raw sunflower seeds
  • 1 yellow pepper, chopped
  • 1/2 cup edamame soybeans, shelled
  • 1/4 cup cashew nuts

Berry Vinaigrette

  • 2 cups fresh or frozen berries, any variety of berries. if using frozen berries allow time to thaw before blending
  • 1/2 cup pomegranate or blueberry juice
  • 1/4 cup cashew butter
  • 3 tbsp balsamic vinegar
  • 1 tbsp apple cider vinegar
  • 1/8-1/4 tsp cayenne pepper

Instructions
 

  • Combine all the salad ingredients together into a large bowl.
    Make the dressing: blend all ingredients in a food processor or blender until smooth and creamy. Pour dressing over salad and enjoy.
