Recipe of the Day (#ROTD)
This chicken couldn’t be easier and it packs a huge flavor punch.
- 2-3 Boneless Chicken breasts
- 2 T of Olive oil
- 1 t of Salt
- 1 t of Lemon Pepper
- The juice of 1 Lemon
- 3 T of Teriyaki sauce
Heat a large skillet on med-high heat, add the Olive oil and let it heat up for a minute or two. Salt and lemon pepper one side of the chicken breast then add the chicken to the skillet. Turn the skillet down to medium heat. Cover the skillet and cook the chicken for 4 minutes. Take the lid off the skillet salt and lemon pepper the other side of the chicken and flip the chicken and cover again for 4 minutes. Take the lid off and flip the chicken once again.
Add the lemon juice and teriyaki sauce, this will start the caramelizing process. The process occurs when the sugars in the lemon juice and teriyaki start to darken and brown the chicken. Keep flipping the chicken so it doesn’t burn or caramelize to much making the chicken taste bitter.
While the chicken is in the skillet slice it and cook each side of all slices. Add more Olive oil, lemon juice, teriyaki, salt or lemon pepper according to your taste.
