Tomato Gratin

Recipe of the Day (#ROTD)

This Ina Garten recipe has been my sons favorite side dish forever. The ingredients are very simple so I use very good ingredients.

  • 3 pints of Cherry Tomatoes-Halved
  • 1 1/2 T Plus 1/4 Cup of Olive oil
  • 1 t dried thyme
  • 3 large cloves of garlic
  • 1/3 cup of chopped fresh parsley
  • 2 cups coarse bread crumbs (crusts removed)

Preheat the oven to 400°

Place tomatoes in a bowl and toss with 1 1/2 T of olive oil, thyme, 1 t of salt, 1/2 t of pepper. Once tossed place tomatoes in a 9×13 dish and spread evenly in the dish.

Place garlic, parsley, and 1/2 t of salt in the bowl of a food processor fitted with the steel blade and process until the garlic is finely chopped. Add bread cubes and process until the bread is fine crumbs. Add 1/4 cup of olive oil and pulse a few more times. Sprinkle the bread crumbs over the tomatoes.

Bake for 40-45 minutes. Serve hot or warm.

This pairs nicely with Skillet Lemon Chicken
