This sauce is adapted from one in The America’s Test Kitchen Family Cookbook and is my preferred accompaniment to Chicken Satay (recipe coming soon). I also loved it with the Thai Chicken Meatballs or would work anywhere peanut sauce is called for.
Ingredients
- 3/4 cup peanut butter (smooth or crunchy will do)
- 3 tbsp fresh lime juice
- 2 tbsp ketchup
- 2 tbsp soy sauce
- 1 tbsp dark brown sugar
- 1 tbsp minced, fresh cilantro
- 2 green onions thinly sliced
- 1/2 tsp tabasco sauce
- 1/2-2 tsp chili garlic sauce (to taste)
- 1 clove minced, garlic
- 1-3 tbsp hot water (add last to adjust thickness)
Instructions
