Spicy Peanut Dipping Sauce

This sauce is adapted from one in The America’s Test Kitchen Family Cookbook and is my preferred accompaniment to Chicken Satay (recipe coming soon). I also loved it with the Thai Chicken Meatballs or would work anywhere peanut sauce is called for.

Ingredients
  

  • 3/4 cup peanut butter (smooth or crunchy will do)
  • 3 tbsp fresh lime juice
  • 2 tbsp ketchup
  • 2 tbsp soy sauce
  • 1 tbsp dark brown sugar
  • 1 tbsp minced, fresh cilantro
  • 2 green onions thinly sliced
  • 1/2 tsp tabasco sauce
  • 1/2-2 tsp chili garlic sauce (to taste)
  • 1 clove minced, garlic
  • 1-3 tbsp hot water (add last to adjust thickness)

Instructions
 

  • Combine all ingredients except water and whisk together. Add hot water to adjust thickness to preferred consistency.
