Avocado, Feta, Cranberry, Quinoa Salad

This incredibly yummy salad was so easy to make it was almost comical. It was also very filling so you could have this on its own for a light dinner.

Ingredients
  

Salad

  • 1 head butter lettuce (chopped fine)
  • 1 cup cooked Quinoa
  • 1 package crumbled Feta cheese
  • 1/2 cup dried cranberries
  • 1 avocado diced

Dressing

  • 3 tbsp vinegar (any vinegar you like)
  • 2 tbsp lemon juice fresh squeezed
  • 1 tbsp honey
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup olive oil

Instructions
 

  • Place all the salad ingredients in a large bowl.
    In a small bowl or mason jar, put the vinegar in the jar/add sugar/salt/pepper/lemon juice and place the lid on the jar and shake. Take the lid off and add the olive oil and shake again. Drizzle over the salad and toss.
    NOTE: I always shake my salad dressing over the kitchen sink just incase the lid pops off.
