Recipe of the Day (#ROTD)
Byerly’s Chicken Wild Rice Soup is the perfect dinner on a chilly fall evening. Byerly’s has been the gold standard of all grocery stores in Minnesota in addition, their food and recipes have been gold medal winners. This soup never disappoints its hardy, nutritious and can be a meal in and of itself.
6TBLS of butter
1 TBLS of minced onion
1/2 C of flour
3 C chicken broth
2 C COOKED wild rice
2 C cubed cooked chicken
1/2 C sliced carrots
3 TBLS slivered almonds
1/3 tsp salt
1 C of half and half
2 TBLS of dry sherry
1 tsp of dry parsley
Melt butter sauté carrots and onion until tender blend in flour and cook for 5 minutes. Add sherry, wild rice, chicken, almonds, salt and chicken broth and bring to boil. Turn down heat to low add in half and half and parsley.
