
A Cindy Pascale OriginalWelcome your Irish friends or relatives on St. Patrick’s Day with a real taste of home – Irish Shepard’s Pie! This meal is a delicious combination of cheesy mashed potatoes on top a savory lamb and vegetable mixture in a delicious sauce. The recipe only calls for a ½ cup of Guiness beer so there will be some beer left over to enjoy with the meal!
Ingredients
- 1 tbsp olive oil
- 2 tbsp salted butter
- 1 lb ground lamb
- 1/2 medium onion diced
- 1/4 cup flour
- 1 large garlic clove minced
- 1/2 tbsp ketchup
- 1 tsp fresh rosemary minced
- 1/2 tsp paprika
- Pinch of ground Cinnamon
- salt
- pepper
- 1 cup beef broth
- 1/2 cup Guiness beer-if you do not have Guiness beer-substitute 1/2 cup more of beef broth
- 6 ounces fresh peeled carrots and fresh peas (you can substitute frozen carrots and peas-thawed)
- 1 lb Yukon gold potatoes peeled and cut into quarters
- 7 ounces Irish cheese such as Dubliner, shredded
- 2 tbsp cream cheese at room temperature
- pinch of cayenne pepper
Instructions
- Place olive oil and 1 tablespoon butter in Dutch oven over medium heat. Stir in onion and let cook for 2 minutes. Then add ground lamb. Cook and stir until meat is brown and crumbled. About 10 minutes. Drain fat.Stir in flour and mix well. Then add garlic, ketchup, rosemary, paprika, cinnamon, salt and pepper. Cook until garlic is fragrant – about 2 to 3 minutes.Stir in Guiness and beef broth and scrape up any bits from the bottom of the Dutch oven. Bring mixture to a boil and then reduce heat to medium-low and bring mixture to simmer. Cook and stir until it thickens – about 5 to 6 minutes.Remove lamb mixture from heat and stir in peas and carrots. Mix well.Spread lamb mixture into the bottom of a 9” deep dish pie pan.Place potatoes into a large pot of boiling water. Bring back to a boil and then reduce heat to medium and cook until the potatoes are tender. Drain well and return potatoes to the pot.Mash Irish cheese, cream cheese, butter and cayenne pepper into potatoes until smooth. Season with salt and pepper to taste.Top lamb mixture with the mashed potatoes and spread evenly to cover the full pie pan.Bake in preheated oven with a cookie sheet or similar under the pan to catch any drippings. The Shepard Pie is done when the top is golden brown and sauce is bubbling around the edges. About 25 to 30 minutes.Enjoy a real Irish meal at home!HAPPY EATING!!
