
This meal was so delicious and couldn't be easier. This recipe came from the Bible of all cookbooks The Complete America's Test Kitchen T.V. Show Cookbook. I served this chicken with fresh corn on the cob and a simple baked potato and it felt like a dinner fit for a king, on a Wednesday night. I had leftovers as well and they honestly tasted even better the next day.
Ingredients
- 2 lbs boneless, skinless, chicken breasts/ sprinkled with salt and pepper
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1 lb cremini mushrooms, trimmed and sliced 1/4 inch thick
- 1 medium onion, chopped fine
- 1/4 cup dry white wine
- 1 tbsp all-purpose flour
- 1 medium garlic clove, minced or pressed through a garlic press
- 1 1/2 cups chicken broth
- 1/3 cup sour cream
- 1 large egg yolk
- 2 tsp juice from 1 lemon
- 2 tsp fresh tarragon leaves chopped
Instructions
- Rinse the chicken and pat dry with paper towels and then season with salt and pepper. Heat the butter and olive oil in a 12-inch skillet over medium-high heat until the butter is melted. Place the chicken in the skillet and cook until brown (about 4-5 minutes for each side). Transfer the chicken to a plate.Add the mushrooms, onions, and wine to the now empty skillet and cook, stirring occasionally until the liquid has evaporated and the mushrooms are browned (8-10 minutes). Add the flour and garlic and cook for about 1 minute. Add the broth and bring the mixture to a boil, scraping up the browned bits from the bottom of the pan. Add the chicken back to the skillet, along with the juices from the plate, reduce the heat to medium-low cover, and simmer until the breasts register 160 degrees (5-10 minutes).Transfer the chicken back to the plate and tent loosely with foil. Whisk the sour cream and egg yolk together in a bowl. While whisking slowly add 1/2 cup of the sauce from the skillet. {This is called tempering}. Slowly pour the sour cream, egg yolk, and sauce mixture back into the skillet and whisk. Add lemon juice, tarragon, salt, and pepper to taste. Plate the chicken and pour as much sauce over the chicken as you like and dig in.HAPPY EATING!!
