Chocolate Crinkles
These little drops of chocolaty goodness add a touch of the "wow" factor to your cookie platter at Christmas and are the perfect little bite if your having a holiday coffee at your home.
Ingredients
- 1/2 cup vegetable oil
- 4 oz unsweetened chocolate melted
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup confectioners (or powdered) sugar
Instructions
- Preheat the oven to 350°Use a hand mixer, I find this creates the texture and consistency you want for these cookies.Melt the chocolate and let it cool to room temperature. Note: You can melt the chocolate in a double boiler or in a heavy sauce pan on a low temperature, stirring consistly. Mix the oil, chocolate, and granulated sugar together in a large bowl. Blend in one egg at a time until blended well. Add vanilla then mix in the flour, salt and baking powder into the egg, sugar, chocolate mixture. Once mixed cover the bowl and place in the refrigerator for 3 hours or over night.Line 2 cookie sheets with parchment paper.When the mixture is chilled, place the powdered sugar in a bowl, then take very small portions of the dough and make little round balls with your hands and place those in the powdered sugar and coat generously, then place the coated chocolate balls on the cookie sheet. Try and place each cookie 2" from each other. Bake for 12 minutes.Do not over bake.
