Big Mac Salad

It all happened after a long day, everyone in my house was resigned to going and getting fast food for dinner. Desperate, I looked in the pantry, freezer and refrigerator and this salad was created. I had really good hamburger from my local butcher, Alexia Sweet Potato Bites and all the ingredients for "mock" Big Mac special sauce (but healthier and yummier).

Ingredients
  

  • 2 lbs ground full fat hamburger
  • 2 tbsp olive oil
  • 1 head romance lettuce chopped small
  • 1 bag Alexia sweet potato bites frozen
  • 1 avocado chopped small
  • 1/2 cup cherry tomatoes sliced into 4ths
  • 1/2 cup hamburger sliced pickles-diced
  • salt
  • pepper

Dressing

  • 3 tbsp mayo or greek dairy free-yogurt
  • 2 tbsp pickle juice
  • 2 tbsp sweet relish
  • 1/2 tsp honey mustard or yellow mustard
  • 1/2 tbsp ketchup
  • Only if needed half/half

Instructions
 

  • Heat 2T olive oil in a large stainless steal pan on medium high heat, brown all the hamburger sprinkling salt and pepper on the meat as it cooks. Once the meat is cooked turn off the heat and set aside.
  • Meanwhile, cook the Alexia Sweet Potato Bites according to the directions on the bag. Once those bites are cooked take them out of the oven and set aside.
  • Cut up the vegetables, lettuce and pickles then transfer to a large bowl and toss together.
  • For the dressing place all of the ingredients in a medium bowl and mix (if you need to thin the dressing out a bit feel free to use half/half or more pickle juice). Also making more is a good idea it's that good.
  • Dress the salad in the bowl and toss. Plate desired amount on your plate and add browned meat and toss or have meat on the side.
