Chunky Guacamole a la Nadine by Kendall Oberto

This is my standard guacamole recipe. I was surprised that I liked the lemon juice over the traditional lime. The quantity of lemon juice really helps it to retain it's green color but you should store it with a plastic wrap or a wet paper towel directly on the surface to prevent browning.

Ingredients
  

  • 3 avocado diced
  • 3 tbsp lemon juice
  • 1/2 cup red onion, minced
  • 1 clove garlic, minced
  • 2 roma tomatoes, seeded and chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 dashes tabasco sauce
  • 1/2-1 thai or jalapeno pepper, seeded and minced (1-2 tbsp) (optional)

Instructions
 

  • Combine diced avocado with lemon juice and toss together.
    Combine other ingredients, starting with 1/2 the jalapeño (if using) and then combine with avocado mixture.
    Add additional jalapeño, tabasco and salt to taste.
    Refrigerate 1 hour or overnight prior to serving.
