Winter Salad or Anytime Salad by Cindy Pascale

A Winter Salad is made from ingredients that thrive and are readily available during the winter. The “winter” stars of this salad are the apple and pear. Both of which are abundant during the colder months. Better yet, this is a delicious salad all year round!

Ingredients
  

Salad

  • 2 bags romaine lettuce
  • 1 cup shredded Swiss cheese
  • 1/2 cup craisins
  • 1 cup cashews, whole or pieces
  • 1 apple, cubed, honey crisp or pink lady
  • 1 pear, cubed

Dressing

  • 1/2 cup white sugar
  • 1/2 tsp salt
  • 1 tsp dijon mustard
  • 2 tbsp poppy seeds
  • 1/3 cup lemon juice
  • 2/3 cup olive oil

Instructions
 

  • Combine lettuce, cheese, Craisins, apple and pear in large bowl. Toss well.
    In small bowl, mix sugar, salt, mustard, poppy seed, lemon juice and oil. Just before serving, mix again as the ingredients may separate. Pour about half of the dressing on the salad. Toss to coat salad. Add more dressing to taste.
    Finish the salad by adding the cashews.
    Serve and enjoy!
