
Whether you're heading to the cabin for a relaxing weekend or just trying to make busy mornings a little easier, these egg muffins are the perfect make-ahead breakfast. Bake a batch before you leave, store them in the refrigerator, and everyone can enjoy a hot breakfast whenever they wake up—no need to coordinate meal times. They're also ideal for hectic weekdays when you need something quick and satisfying. Just pop one or two in the microwave for a few seconds, grab them on your way out the door, and you're ready to go.Simple, versatile, and packed with protein, these egg muffins are sure to become a favorite for home, the cabin, or anywhere life takes you.
Ingredients
Egg Mixture
- 8 large eggs
- 1/4 cup milk
- 1 tsp salt
- 1/2 tsp pepper-more to taste
Filling
- 1 tbsp butter
- 1 small to medium onion, chopped
- 1 small to medium red pepper, chopped
- 2 1/2 ounces baby spinach (1/2 of a 5 ounce bag of baby spinach)
- 4 ounces cherry tomatoes, cut in quarters and seeds removed
- 1/4 cup crumbled feta cheese
- 1/4 tsp dried basil
- 1/4 tsp dried oregano
Instructions
- Preheat oven to 350°. Either lightly spray 12 cup muffin tin with nonstick spray or line muffin tin with cupcake liners.Mix the egg mixture together – make sure the eggs are fully blended.In a large skillet over medium high heat, melt the butter. Once melted, added the chopped onion. After the onion is softened, add the red pepper. After about 5-7 minutes, add the spinach and tomatoes. Once the spinach has reduced in size, transfer from skillet to large bowl. Let cool for a few minutes occasionally stirring to facilitate cooling.Once cool, add spices and feta cheese. Mix well.Spoon filling into 12 muffin cups – about 2/3 filled. Carefully spoon egg mixture into each muffin cup to about 2/3 filled. To minimize spilling, I use a gravy ladle to spoon the egg mixture.Bake at 350° for 25 minutes. The muffins will be done when the tops of the muffin are browned and a knife inserted into the muffin comes out clean. Place on wire rack.Either serve while still warm or cool completely then refrigerate or freeze. Warm in microwave.HAPPY EATING!!
