Strawberry Spinach Salad by Cindy Pascale

When the summer heat is at its peak, few dishes are as refreshing and satisfying as a strawberry spinach salad. Bursting with juicy sweet strawberries, crisp spinach, and a light, flavorful dressing, this salad is the perfect balance of fresh and vibrant flavors. Whether you’re serving it alongside grilled chicken at a backyard barbecue, enjoying it as a light lunch on the patio, or bringing it to a picnic with friends, this colorful salad adds a cool and refreshing touch to any warm-weather meal.

Ingredients
  

Salad

  • 8 oz strawberries, sliced
  • 1/2 medium cucumber, sliced
  • 1/4 red onion, sliced
  • 8 oz baby spinach
  • Optional 1/4 cup sliced almonds or cashews

Dressing

  • 2 tbsp lemon juice (1 lemon)
  • 2 tbsp white wine vinegar
  • 1/3 cup white sugar
  • 1 tbsp light olive oil
  • 1 tsp poppy seed

Instructions
 

  • Mix the dressing ingredients (lemon juice, white wine vinegar, sugar, olive oil and poppy seeds) in a small bowl. Set aside.
    Combine spinach, cucumber, strawberries, and onion in a large bowl.
    When ready to serve, remix dressing as it probably separated. Pour over salad.
    Optional: add almonds or cashews to salad by sprinkling them on top of the salad.
    Serve and enjoy!
