Ingredients
Salad
- 8 oz strawberries, sliced
- 1/2 medium cucumber, sliced
- 1/4 red onion, sliced
- 8 oz baby spinach
- Optional 1/4 cup sliced almonds or cashews
Dressing
- 2 tbsp lemon juice (1 lemon)
- 2 tbsp white wine vinegar
- 1/3 cup white sugar
- 1 tbsp light olive oil
- 1 tsp poppy seed
Instructions
- Mix the dressing ingredients (lemon juice, white wine vinegar, sugar, olive oil and poppy seeds) in a small bowl. Set aside.Combine spinach, cucumber, strawberries, and onion in a large bowl.When ready to serve, remix dressing as it probably separated. Pour over salad.Optional: add almonds or cashews to salad by sprinkling them on top of the salad.Serve and enjoy!HAPPY EATING!!
